What you will need:
Raw Shrimp
Garlic
Onion
Polenta – one tube found on the pasta aisle
Tomato Sauce
Fresh Basil
Salt
Italian Herbs
Granulated Garlic
Mozzarella Cheese
Here we go!
First, slice polenta into 1/4 inch slices. I got the Sundried Tomato and Basil Polenta, but regular is fine. Place on a cooking sheet and bake at 350 for 10 minutes. If you have never used Polenta before, it is made from corn meal and is delicious. Try it. Really.
While that is baking, chop up onion, garlic and shrimp. I cut each piece of raw shrimp into approximately 3 bite size pieces each. Saute onion and garlic in a frying pan with Pam. Add in raw shrimp and continue to saute.
In a small bowl, mix together tomato sauce, Italian herbs, small amount of salt, and granulated garlic. Cut up fresh basil and add to sauce. After removing polenta from oven, place 1/2 Tbsp of tomato sauce on each slice of polenta. Add shrimp mixture to top of polenta. Add a small amount of mozzarella cheese and freshly chopped basil to the top of each piece. Turn oven to broil and broil Garlic Shrimp Polenta until the cheese starts to brown and bubble.
Bet you can’t eat just one!

1/4 slice polenta
1/2 Tbsp tomato sauce
1.5 shrimp (5 – 6 bite size pieces)
1/2 Tbsp Mozzarella Cheese
All for around 50 Calories! Yeah!
