I fully understand the importance of a healthy breakfast, and yet sometimes I get a FAIL when it comes to feeding my kids in the midst of our morning frenzy! It also doesn’t help that I – hands down – have the pickiest offspring on the planet. I finally found a morning muffin that they love (after several FAILS!) and the cool thing is, I can change the flavor of the muffins by simply changing one ingredient. Who says you can’t please everyone? Psh! SUCCESS! And, of course, they are easy peasy!
2 cups whole-wheat pancake mix (I use Kodiak pancake mix)
1 cup non-sweetened vanilla almond mik
1/4 cup no sugar added applesauce
1/2 Tbsp cinnamon
Gabe actually likes the muffins just like this. No fruit. No chunks. OR….add in:
1 cup blueberries (blended if desired)
1 cup pumpkin + 1/2 Tbsp pumpkin pie spice
1 cup mashed banana + 1/4 cup crushed walnut
Any other combination you can think of!
Mix all ingredients in food processor. Fill 12 muffin tins 3/4 full with muffin mix. Bake at 350 for 15 – 20 minutes (pumpkin need 20+). Wake said offspring to a delicious aroma. Remove from oven and let cool. Serve with a side of eggs any style.
These are just a few examples of ones we have tried so far, but I think strawberry, mixed berries, apple pecan, etc would all be delicious! Get creative to please everyone in your house with they love. Enjoy!
For my calorie counting friends, the base recipe is 79 calories per muffin. Then add in your fruit/nut calories.
