Taco Bites

These little Turkey Taco Bites are delicious, easy and oh so cute!

I got the idea HERE.  She has the most amazing ideas for your kids’ lunch.

I debated whether to use a mini-muffin tin or regular.  I chose the mini tin which turned out to be the perfect size to just pop these tacos right in your mouth!   To start, preheat oven to 350 degrees.  Cut circle shapes out of a whole wheat tortilla using a circle cookie cutter or biscuit cutter.  Your kids will love to help with this.  I also tried flavored tortillas, which were delicious.

Once cut, place one circle in each opening of the mini muffin tin.  You kind of have to press each one in.  I then sprayed each one with a small amount of olive oil.  Place in oven and bake for 5 – 7 minutes.

For the filling, I browned extra lean ground turkey and added a low sodium taco seasoning to it.  You could also do beef, chicken, fish or refried beans.  Top each taco bite with cheese, lettuce, salsa, tomato, onion, olives, avocado or whatever you and your little peeps are craving.  You could get super creative with the fillings.  The muffins are small, but you can pack a lot in there!
