Cottage Cheese Pancakes

I have been traveling a lot lately and been out of my kitchen, and these Cottage Cheese Pancakes have been a lifesaver. They are easy to make, nutritious, delicious, convenient, and they freeze well.

Cottage Cheese Pancakes

There are several variations to this recipe, but here is my super easy variation:

– 1/3 cup oats
– 1/4 cup cottage cheese
– 1 Tbsp Vanilla Protein Powder
– 2 egg whites
– 1/2 tsp baking powder
– 1/4 banana
– Cinnamon and sweetener (liquid vanilla stevia) to taste

Start by blending the oats and protein powder into flour in a small blender. Add all other ingredients and blend to a smooth texture. Pour 3-4 pancakes onto hot electric griddle. Cook on each side. Remove from griddle to let cool on cookie rack. Delicious to eat warm or place in ziploc baggies or wrap in tinfoil to freeze and eat later. Makes one serving for approximately 240 calories.

Try swapping the banana out for 1/3 cup blueberries, 1/2 cup sliced strawberries, or 1/2 peach. I like to make several batches and have them on hand in my freezer for emergency snacks when I am running out the door.  Enjoy!
