Island Tacos

Yesterday I shared one of the most incredible marinade recipes I have tried in a long time.   A long time.  Like ever.  With said marvelous marinade, Jesse and I whipped up some Island Salmon Tacos.  So far we have had them every night this week, and I intend to continue to have them the rest of the week.  They are that good, my friends.

I started by marinading salmon overnight in the magical marinade.

Bake for 20 minutes on 450 degrees or until brown.

Right before it is done, crisp both side of a corn tortilla in a frying pan sprayed with Pam.  Once crisped, spread one Light Laughing Cow Spreadable Cheese Wedge on warm tortilla.

Remove salmon from oven, break up with fork and add 1/4 cup cabbage mix.  Layer salmon mix onto corn tortilla.

3.5 oz raw salmon
1 corn tortilla
1 Light Laughing Cow Spreadable Cheese Wedge
1/4 cup Cabbage Mix
