Pumpkin {Chip} Bread

I won’t lie…when I made this bread for the kids and they nodded their heads in approval with a mumbled “mmmm”, I turned around so they couldn’t see me, mouthed a big “YES”, and added in a fist pump for good measure. What they didn’t need to know was that the bread was made without any butter, oil or sugar. And they still liked it! Try it out this weekend and see if you get the same reaction!

{we were feeling extra naughty this weekend with the chocolate chips…}

Ingredients:

1 1/4 cup whole wheat flour
1 cup plain canned pumpkin
1/4 cup applesauce
2 egg whites
1 1/4 tsp baking powder
1 tsp baking soda
1/4 tsp vanilla extract
2 tsp cinnamon
2 tsp pumpkin pie spice
stevia to taste
pinch of salt if desired (I think it’s great without)
*choc or carob chips if you’re feeling extra naughty or it’s time for a weekend treat.

In a food processor or mixer, blend together pumpkin, applesauce, and egg whites. Mix in all remaining ingredients to smooth consistency. *Stir in chips. Pour into sprayed 4 x 8 bread pan. Bake at 350 degrees for 30 – 35 minutes or until center is cooked through. Remove from pan and cool on cooling rack. Slice and enjoy!

Makes 10 slices at 75 calories per slice {without the chips.}
