Egg “Party” Cups

Breakfast during the week is pretty much the same day in and day out for Jesse and I…some variation of a protein shake. So when the weekend hits, we like to break out of our weekly mold and try something new. I know. We are wild and crazy! We just can’t help ourselves. But no matter how crazy the idea gets, it still has to be super simple or I am not trying it. Last weekend we made these Egg “Party” Cups and they turned out to be both simple and delicious!

Ingredients:
4 small whole grain tortillas (I used Mission Carb Balance)
1 whole egg
4 egg whites
2 slices cooked turkey bacon
4 Tbsp Feta cheese
Salsa
1/2  – 1 chopped bell pepper (I used a variety of colors and mixed together)
1/4 cup chopped onion
1 clove garlic
Green onion

Chop up bell pepper and garlic and sauté with chopped onion until soft. Take each tortilla and make 2 pleats per tortilla and fit into a muffin tin.  In a small blender, blend eggs (I added a small amount of salt) until smooth. Pour 1/4 egg mixture into each tortilla. To each tortilla, add in sautéed veggies, 1/2 piece crumbled turkey bacon, and top with 1 Tbsp feta cheese. Bake in oven at 350 degrees for 15 – 20 minutes or until egg is completely cooked through and cheese is melted. Remove from oven and top with salsa and chopped green onion. Serve with a side of fresh fruit and enjoy!

Each egg cup is around 145 calories!

  1. gotta love something new to do with eggs. help question…do i have something seriously medically wrong with me… i am always hungry… always i have tried all the common things to help me feel full and stay that way. everything.. even an appetite suppressant and im still hungry.. not just cravy and snacky. hungry. help advice anything. i have a goal i am trying to hit and cant get there when the food is constantly sabatoging me. boo to the food alicia

  2. Alicia – hey babe! Couple of questions:

    1. What is the percentage of fats you are eating each day? (are you also taking your Omega 3’s?)
    2. Are you eating within that first hour of waking up WITH a protein source? (that will help keep you full longer)
    3. How intense are your workouts and are you fueling your body with food both before and after?
    4. Hard to wrap the head around…but you might need more food! It may be your body telling you that you need MORE calories.
