Butternut Gorgonzola Pizza

A couple of weeks ago we went on a date with some friends to Pizzeria 712. Oh my. It was delicious. We ordered a variety of appetizers, pizzas, and desserts. Everything was fantastic. And I mean everything! There was one pizza in particular that I just couldn’t get off my mind after we left. It was this amazing medley of butternut squash, onions, and gorgonzola. Um…yeah. Party in my mouth. I set out to recreate it, and we have now made this several times at our house and have declared it a winner. We made, we devoured, we licked our fingers (and maybe our plates)…so I had to share!  Enjoy!

whole wheat pizza dough (1/3 of recipe)
1 cup roasted butternut squash
1 grilled chicken breast
1 oz gorgonzola cheese
2-3 slices turkey bacon
1 caramelized onion
rosemary

Make pizza dough and divide into 3 equal parts and roll thin. Caramelize onions with a bit of olive oil and a little organic sugar. Take a couple of spoonfuls of the leftover oil and spread on the dough after rolling it out. Cook turkey bacon and dice small. Top dough with onions, diced chicken, bacon, butternut squash, gorgonzola cheese, and rosemary needles. Bake in oven on 450 for 15 minutes. Seriously, one of the best pizzas I have ever had!!

We added more grilled chicken breast to the side for added protein
