Turkey Muffins

Yes, yes, I know….”turkey” and “muffins” should NOT be used together. I get it. It’s like taco ice cream or meatloaf cookies. Gross. But believe me, these grab-n-go muffins are the real deal!  They are going down as one of my favorite lunches. Easy and delicious. Just like this happy mama likes it!

Turkey Muffins

Recipe inspiration:  Jamie Eason and a recipe from my sweet coach, Sandy.

1 cup dry rolled oats
1 lb RAW ground turkey
1 small onion, chopped
2 whole eggs
2 TB tamari sauce
2 TB sweet asian chili sauce
celery and ginger optional

Blend oats into a fine flour (I leave a few of them whole to add some texture). Mix all ingredients together until well mixed. Spoon into 10 aluminum muffin tin liners (they come out better in comparison to paper liners) and bake at 375 for 25-30 minutes. Makes 10 muffins. Each muffin is approximately 105 calories each. Serving size = 2-4 muffins depending how hungry your tummy is.
