Summer! Summer! Summer!

I cannot even begin to tell you how excited I am that the warmer weather is here (to stay, I hope…)  I have always felt like Memorial Day weekend is the official kick-off for summer. It marks the day to bring out the flip-flops, bust out the swimming suit, take part of my workout outdoors, fire up the BBQ…I’m ready, baby, bring it on!

With summer here, I start to crave more fresh fruits and veggies. One of my favorite summer delights has always been Fruit Pizza. I have been on a mission the past few weekends to find a healthy version (sorry to my sweet hubby for having to taste test all of them. All of them. There were multiple failed attempts.) BUT, we finally scored with this one!  Enjoy and have a happy and healthy holiday weekend!

Fruit Pizza

3/4 cup oats
1/3 cup almond flour
1/4 tsp cinnamon
1/4 tsp powdered stevia
1 TB coconut oil
3 TB unsweetened vanilla almond milk

1/4 cup non-fat plain Greek yogurt
2 TB FAVAO vanilla protein powder

Blend oats into a fine flour in a small blender. Combine all crust ingredients in a mixer and mix well. Press crust evenly into a sprayed pie dish or onto a piece of parchment paper. Bake in oven at 350 for 12-15 minutes. While crust is cooling, mix all frosting ingredients and spread on cooled crust. Top pizza with your favorite fruit! I used kiwi, strawberries, bananas, and blueberries. Cut pizza into slices and serve. The first slice (if baked in a pie dish), may be slightly hard to remove and crumble a bit, so feel free to offer to take that additional piece for yourself. Somebody has to do it.

As a side note, I felt like it was only right to perform the proper quality control for you…it tasted just as good the second day after sitting in the fridge. You’re welcome.
